STRAWBERRY CHIA JAM
Elevate your breakfast experience with this quick + easy strawberry jam, crafted from frozen strawberries, chia seeds, and a touch of ground vanilla.
Unlike most store-bought jams, this sugar-free delight is designed to balance blood sugar levels while delivering a burst of natural flavor. It pairs beautifully with unsweetened chia pudding by adding a delicate touch of natural sweetness.
Ingredients
MAKES 1 MEDIUM JAR
▪ 16oz frozen strawberries or 16oz fresh strawberries
▪ 1 Tablespoon fresh lemon juice
▪ 1 Tablespoon chia seeds
▪ 1/4 teaspoon vanilla bean powder (optional)
Instructions
Thaw frozen strawberries in the fridge overnight.
In a medium sauce pan, combine all the ingredients — except the chia seeds. Cook, stir, and mash with a potato masher over medium heat for about 15-20 minutes, until the strawberries have broken down and the juices have thickened.
Stir in the vanilla (if using) and chia seeds with 2 tablespoons of water to help it thicken.
Transfer the jam to a canning jar (I like Weck tulip jars). Wrap the jar in a kitchen towel, and allow the jam to slowly cool and thicken before refrigerating. Will keep for up to one week or more.
